Character

The harvest is specific, at maturity, without excess to capture the freshness. Slow pressing, at low pressure, under inert atmosphere. We carry out aging on lees in vats: every two days, the fine lees are resuspended in order to bring smoothness and fat, and to preserve all the aromatic richness of the wine.
