Character

From the gravel plot called ‘des Moulins’ planted with Sauvignon blanc and Sémillon, the harvest is carried out at maturity but without excess in order to capture the freshness. We carry out aging on fine lees in vats: every two days, the lees are resuspended in order to bring smoothness and ‘fat’, and to preserve all the aromatic potential of the wine.

Food & Wine Pairings

Essential to accompany oysters, seafood, white shrimp from the estuary. On fish or a fresh goat cheese salad.
